Homemade Sourdough Bread, life lessons

I've been spending some time reflecting on other aspects of food, life, sustainability by growing leafy greens and making this loaf of bread. This is my first successful loaf after a year of discovering how to work with gluten, windowpane testing and the sort. It's really amazing to create something with limited resources- flour, water and salt- and it doesn't stop there. 

The thing about knowing these techniques is that there are no shortcuts. You mix, wait for the flour to hydrate, knead to encourage gluten formation, wait, knead, ferment overnight, all steps that make up for a fulfilling loaf. Baking is just the icing in the cake.

With this bread, we slightly toasted on the pan with a little bit of oil and enjoy our condiments w/ some cheese and garden greens for a full meal.
